Cinnamon Mornings and Chocolate Dreams

Cook Time: 25 minPrep Time: 15 min
Yield: 6 servings 

Ingredients:
2-4 tbsp butter
3/4 cup flour
1/2 cup of milk
1/2 cup heavy cream
1 tsp salt
1 tsp vanilla
4 eggs
1/8teaspoon of baking powder
1 cup of blueberries or other fruit (if using apples or pears add 1 tsp of cinnamon and 2 tblsp of brown sugar)
¼ cup of sugar (if using apples or pear omit 2 tblsp)
confectioners sugar


Instructions:
Preheat oven to 400. Place cast iron skillet in oven to heat. Beat eggs, milk and cream until frothy, add vanilla, salt and flour beat until bubbly. When skillet is preheated place butter in and swirl around to coat bottom and sides. Place a handfull of fruit in the bottom and sprinkle with about 1/4 of the sugar. Place in oven for 1-2 minutes just until juices start to flow. Pour batter over fruit and sprinkle remaining fruit and sugar on top. Place in oven for 20-25 minutes until puffed and golden. Let cool about 5 minutes before serving, sprinkle with confectioners sugar. Serve with warm maple syrup and sausage links. Makes 6-8 servings
