Yield: 9 servings

Ingredients:
1 cup brown sugar
1/2 cup margarine
2 Tbsp water
1- 29 oz can sliced peaches
5 eggs
1 1/4 cup milk
1 Tbsp vanilla
6 slices white bread

Instructions:

Drain peaches and reserve syrup. Heat sugar and margarine in microwave for 1 minute. Add 1 cup brown sugar and microwave 1 minute more, then add 2 tbs. water. Continue microwaving until thick and foamy about 1-2 minutes. Pour into 9 x 13" baking dish and cool for 10 minutes. Place peaches on cooled carmel sauce and cover with slices of bread placed close together. Beat eggs, milk and vanilla until mixed. Pour over bread, cover and refrigerate overnight. Bake at 350 degrees for 40 minutes. Loosely cover with foil the last 10 minutes if browning too fast. Serve with warmed peach syrup.
