Cinnamon Mornings and Chocolate Dreams

Yield: 1 dozen 

Ingredients:
1 cup dried pitted cherries (without preservatives if possible)
½ cup softened butter
¾ cup sugar
1 cup buttermilk
2 eggs
1 ¾ cups flour
2 tsp baking powder
1 tsp baking soda
pinch salt

Instructions:
Combine cherries and buttermilk in bowl to soak for 30 minutes. (You can make buttermilk by mixing a tablespoon of vinegar with regular milk.) Preheat oven to 350 degrees F. Double sift flour, baking soda, salt, and baking powder together-set aside. Cream together butter, sugar, and eggs. Mix all ingredients together until blended. Fill muffin tins to 2/3 full. Bake for about 20-22 minutes. Cool for 3-5 minutes before removing from tins.
