Yield: 3 dozen

Ingredients:
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 cups sugar
1 cup butter
2 eggs
1 tablespoon vanilla
1 cup buttermilk

Instructions:
These yummy cookies are more like cakes than cookies, and are a popular offering by bakeries at our local farmer's markets.

Sift together flour, baking soda, baking powder and salt. Set aside.

Cream together sugar and butter. Add eggs one at a time, beating after each addition. Add vanilla and beat.

Stir flour mixture into sugar mixture, alternating with the buttermilk. Stir until smooth.

Drop by tablespoonfulls (or use a small ice cream scoop) on to greased cookie sheets (or, for best results, line cookie sheets with parchment paper). Sprinkle tops with sugar.

Bake at 375 degrees for 7-10 minutes. Remove from cookie sheet and cool on rack. Store in airtight container.
