 Cranberry Lemon Pancakes Recipe

Yield: 6 servings 

Ingredients:
1 1/4 cups flour
1/3 cup milk
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup water
1 tablespoon butter, melted
2 teaspoons vanilla
1/4 cup lemon juice
Zest of 1 lemon
3/4 cup cranberries, fresh or frozen

Instructions:
In a large bowl, combine flour, sugar, baking powder and salt.

In a smaller bowl, combine water, milk, melted butter and vanilla. Pour into dry ingredients and stir until well moistened. Add lemon juice and zest. Fold in cranberries.

Place pan or griddle over medium heat. Spray or butter and spoon batter onto griddle and cook.
