Ingredients: 1 cup chopped onion
1 cup salsa
1 10-ounce package chopped spinach, thawed and squeezed dry
2 ½ cups grated Jack cheese
8 ounces cream cheese, cut into small cubes
½ cup sliced black olives
1 cup chopped pecans
Instructions: Combine onion, salsa, spinach, 2 cups cheese, cream cheese and olives. Transfer to oven-proof serving dish and top with pecans.
Bake about 30 minutes at 400°F until hot and bubbly. Top with remaining cheese. Serve hot with corn chips.
