Ingredients: 12 large eggs 16 oz ham chuncks (or bacon bits or cooked sage flavored sausage, also delicious meatless) 1 16 oz container small curd cottage cheese 1 10 oz pkg frozen Spinach 1 cup Parmesan cheese 1 cup shredded sharp cheddar cheese 2/3 cup heavy cream 2/3 cup tomato basil feta cheese 3 Tbsp butter (or margerine) 1 Tbsp Lea & Perrins worchester sauce 1 Tbsp all purpose flour 1/2 Tbsp garlic salt 1/2 Tsp white pepper 1/2 Tsp Dill Instructions: Preheat oven to 375 Spray sides and bottom of glass 9x13 baking pan. Microwave frozen spinach according to directions and drain throughly, forcing all the liquid out as much as possible. Beat eggs throughly, add the heavy cream and cottage cheese and mix throughly. Fold in the feta and 1/2 cup Parmesan and 1/2 cup Cheddar. In a separate microwabable safe bowl melt the butter and stir in the flour,white pepper and dill. Add to the egg mixture. Fold in the drained spinach and ham chuncks. Spread evenly into the greased baking dish. Sprinkle the remaining Parmesan and Cheddar cheeses over the top of the casserole and bake for 45 minutes. Let stand for 10-15 minutes before cutting into squares. Serve with a dollop of sour cream. Note: This recipe can be kept in the refrigerator overnight and baked the next morning. Remove from refrigerator at least 45 minutes before baking. Notes: This is one of my most requested recipes! |
