Cinnamon Mornings and Chocolate Dreams

Whether you're hosting a formal get-together or need a quick brunch idea, this book will spark your imagination and your appetite.

Cook Time: 20 minPrep Time: 15 min
Yield: 8 servings 

Ingredients:
12 eggs
1/2 cup light cream or milk
2 large Tbls. flour
a pinch ground pepper/salt (optional)
1 Tbls butter
1 Tbs. olive oil
1 cup shredded cheese
1 Tomato
Basil

Instructions:
Preheat oven 450F or hotter

In a bowl beat together:
12 eggs
1/2 cup light cream or milk
2 large Tbls. flour
a pinch ground pepper/salt (optional)

In a large skillet (12 in.)
heat over medium high flame
1 Tbls butter & 1 Tbs. olive oil
scramble eggs very wet ; top with fresh tomatoes, basil and 1 cup shredded cheese (Monterrey jack or mild cheddar)
Bake in hot oven 10 min. until puffed and cheese is bubbly, cut into wedges; serves 8


Notes:
Note: you may use any topping you like
Examples: roasted vegetables, ham, spinach, cooked onion and bacon, sausage etc.
