Cinnamon Mornings and Chocolate Dreams

Cook Time: 30 minPrep Time: 10 min
Yield: 6 servings 

Ingredients:
2 bags fresh spinach (chopped) OR 1 10 oz package of frozen spinach
1 cup all purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 teaspoons onion powder
1 teaspoon garlic powder (NOT garlic salt)
½ teaspoon red pepper flakes (you can omit pepper flakes if you don’t like them)
2 eggs
1 cup milk
½ cup melted butter
1 chopped onion
1 8 oz block of Cabot Cheddar Cheese (seriously sharp, Hunter’s favorite) shredded


Instructions:
Preheat oven to 375 degrees. Grease 9 X 13 pan. Thoroughly mix all ingredients together in a bowl. Pour in pan and bake for 30 to 35 minutes or until golden brown. Let cool 15 or more minutes before serving. For an even tastier treat, add more shredded Cabot Cheddar Cheese on top and/or feta cheese. This dish is good for breakfast, lunch or dinner, and it is even better the next day as leftovers!



Notes:
Not a sweet brownie, but rather cake like and creamy, this recipe can be halved with success if the quantity is too much.
