Cinnamon Mornings and Chocolate Dreams

Ingredients:
2 cups diced French bread
3 cups diced whole wheat bread (7 grain bread)
1/4 tsp salt
2 cups warmed low fat milk
1 cup orange juice
3/4 cup egg substitute (or 3 eggs)
1/3 cup sugar
1 tsp vanilla
1/2 tsp nutmeg
1 Tbsp grated orange rind
1/2 cup regular raisins
1/2 cup golden raisins
1/2 cup chopped nuts

Instructions:
Preheat oven to 350 degrees F. Soak bread in warm milk and orange juice for about 15 minutes. Combine egg, sugar, vanilla, and nutmeg. Mix well. Pour over bread mixture. Add remaining ingredients and stir lightly with fork until well blended. Bake pudding in a baking dish set in a pan of hot water. Bake 45 minutes, or until browned on top and pudding is set. Serve with cream substitute poured over warm pudding. This recipe is used by the Heartlife Institute.
