Cinnamon Mornings and Chocolate Dreams

Whether you're hosting a formal get-together or need a quick brunch idea, this book will spark your imagination and your appetite.

Ingredients:
1 cup cooked pumpkin
1 cup grated or mashed carrots
1 or 2 beaten eggs
1 tsp vanilla
2 cups sifted flour
1 tsp baking soda
1/2 tsp baking powder
1 cup or less sugar - to taste. Mix with wet ingredients.
about 1/2 cup liquid, carrot water
apple or orange juice or milk
any light fruit juice

Optional: about 1/2 or 3/4 cup peanut butter
or other chopped nuts.
Would be good with diced dried fruit too.

Instructions:
Mix the wet things together. Gradually add the dry ingredients, sifted together. Stir until the consistency of wet mortar. Add the liquid as needed to reach this consistancy. Pour into greased or sprayed long loaf pan. Bake at 350°F for about an hour, or until toothpick inserted into highest point in bread comes out clean.

Serve warm or not.

It's not as tasty as it would be made with shortening but it is better for you. I've made at least 5 of these.
